Still, there is enough time to stop and enjoy the moment. This is Slow Travel, The Danish Way with a very special touch – it is exclusively for you and your travel companions to enjoy. All experiences have been carefully selected with a focus on sustainability, quality and engagement with the local community – from the microbrewery to coffee roastery and winery to the socio-economic restaurant that use only seasonal and local ingredients. We travel with respect for the locals and promise nature and ourselves not to leave any traces, except those of our bikes. We ride super cool, Danish designed, upcycled quality gravel bikes – with or without electric drive, it’s up to you. Our luggage is transported separately by electric cars and occasionally we use public transportation to connect our site visits.

Meet Lars Schmidtsdorff, the Founder of Gastrominoen

”My inspiration for Gastrominoen comes, among other things, from the years I lived in Catalonia. I often hiked and biked in the Pyrenees. On these trips, you always meet the locals, enjoy the small wineries and sleep in small hostels where you are served the dish of the day. It’s simple, but it’s good. To me, that’s the ultimate luxury. That’s what I want to create with Gastrominoen.”

After years of traveling and working as a ski, hiking and diving guide in Europe, South and Central America, Lars returned to Denmark and was inspired to recreate some of the atmosphere and ambiance of his native Copenhagen. This initially resulted in the infamous Kayak Bar & Kayak Republic. Another example of his entrepreneurial spirit is Active Copenhagen, a cycling and running community that offers tours focused on urban, active experiences.

Lars is also the co-founder of Green Towers, two urban cafes and break spaces centrally located in old telephone towers in Copenhagen. His latest adventure is Gastrominoen, a new form of responsible micro-tourism and a way to design hyperlocal experiences to activate, potentially grow and strengthen small, unique businesses that shape a local community – a cornerstone of the concept of “Gastrominoen.”
